    Default Your Healthiest Recipe thread

    I am beginning a new regime to lose weight and would love love love any and all of your healthiest recipes pretty please!!

    Meal planning has been my achilles heel and it is harder than ever being so busy. And I have a significant amount of weight to lose.

    Lean meats, legumes & veggies top the list. I'll try anything Points for something that can be made and served all week, refreshed somehow and/or variations.

    I strip off the meat and serve the chicken on top of salad or other veggies one night, use the carcass for broth and eat the meat shredded in the broth with more veggies another night. I usually play with the seasonings based on my mood.

    The skinnytaste site also has a ton of ideas.

    I barely use cookbooks with foodnetwork.com and epicurious etc available *except* for this one. I bought a little plastic document stand on amazon for a few dollars that I use with it - - you can take the page out of the cookbook. It is cooks illustrated so they balance taste with healthiness, a moderate approach.

    I've made a few recipes now from www.skinnytaste.com, and haven't been disappointed by any of them. We really like the Salisbury Steak, which I've made with the Cauliflower Puree, which I love; the Sofrito Chicken Stew; and the Chicken and White Bean Stuffed Peppers. I have a bunch more of her recipes saved with the intention of trying them soon.

    I also like recipes from Cooking Light, and this Ellie Krieger Greek Style stuffed pepper recipe has been one of our favorite dinners for the past few years.

    We also like Ellie Krieger's Teriyaki Chicken Thighs, and per her suggestion in her cookbook, use the same teriyaki recipe on pork tenderloin, which is also great.

    Other than that, I just try to keep our meats lean, and optimally serve two vegetables (or a vegetable and a salad) instead of a vegetable and a starch with meals a few nights. We are never going to be a family who gives up pasta and other carby delights, so I just try to balance things out.

    ETA: If you like fish, we also really like this Ginger Sea Bass over Wilted Greens recipe (well, DH and I do...). I don't usually use sea bass...any flaky white fish will work, like cod or another thicker white fish.

    We also do black bean soup every now and again, but I don't make it from scratch - I use Trader Joe's Latin Style Black Bean Soup with a can of organic black beans mixed in. We serve it over rice and/or with diced ham, lime slices and chopped onion.

    Frankly, a lot of Giada's recipes from Giada at Home and Everyday Italian tend to the lighter side of things - the way she uses ingredients increases the flavor without loading up the calories.

    A favorite of mine is to make refried beans in the crockpot and use for various meals all week....burritos, nachos, tacos, and then as a side to something else. The beauty of this recipe is that the beans aren't actually refried so they're fat free!

    I omit the jalapenos because I'm incredibly sensitive to any type of heat, and I reduce the salt to 2.5 tsp. Sometimes I add the cumin, and sometimes I don't....depends on my mood

    Agreed. Also like Krieger's 3 bean and beef chili, which you could use a leaner ground turkey if you want. Makes a ton.

    3-4 boneless chicken breasts
    1 jar chunky salsa
    1 can yellow corn, drained
    1 can black beans, drained

    Put in crock pot. Cook on low 3-4 hours. Shred and serve in tortillas or over brown rice. This is my go to recipe that everyone eats! I have it cooking right now. My kids love it in a tortilla with lots of cheese

    Thanks for the suggestions! I am making chicken breasts covered in green salsa in the crockpot and I'm making the refried beans recipe in a bean pot. It's the first time I've tried the bean pot, so it will be interesting to see how they turn out.
