    How about grain salads like quinoa? Or lentil recipes?

    My mom's lentil soup:


    Lentil Soup
    1 large sweet onion, chopped
    4 cloves garlic, minced
    Lots of celery
    2 T. olive oil
    1 package frozen chopped spinach
    1 bag lentils, rinse
    1 T. salt
    14 cups water
    1 large can diced tomatoes

    Saute onion, garlic and celery in a small amount of olive oil. Add all other ingredients. Cover and cook until lentils are done, about one hour.

    I used pacific brand light soy milk (probably could use rice milk)

    and I don't think I ever used the cheese (used Kraft parmesian or something)

    & I didn't use the dried tomatoes...I did use broccoli
    anyway: it's yummy!

    I was on a cream sauce kick at one point...I also learned at a WW meeting that cooking w/ powdered skim milk makes things taste creamier than using (regular) skim milk....

    We are trying to eat more healthy around here too, though much of what I end up liking is stuff that DH and I like and the kids would not try (maybe because more spiciness?). Most of the following are all vegetarian though we are definitely not a vegetarian family. DH did not grow up eating many veggies so they need to be a bit more interesting to entice him, but now he is won over.

    Lentils in Mujaddara with spiced yogurt (so simple but amazingly good)

    Simplest ever chickpea salad... legume-loving DD sometimes makes it to pack for her lunch. We use S&W (non reduced sodium) garbanzos, rinsed.

    There are a number of tasty southwest flavor quinoa salads (with beans, tomatoes and corn)... I don't have a favorite but you'll find many online.

    I'm really intrigued by the quinoa patties. They look really yummy. I make a chickpea salad very similar to the one posted, except I use dill instead of parmesan.

    I just made a quinoa salad to take to a friend. I cut quite a few peeled clementines in half, then sliced up the pieces. Chopped some green onion, red bell pepper, cucumber (deseeded). Squeezed some extra juice from clementines over the whole thing. Added in a bit of feta. Topped with slivered almonds before serving (I delivered mine in a separate container so she could add them at the last minute).

    The quinoa patties are tasty! I left out the parsley because I didn't have any, though I think parsley is a good "green flecks gateway drug" for the kids as they would have eaten it anyway. I did up the seasonings a little (I think 1/2- 1 tsp of Spice House Old World Seasoning) in the mixture. They were even good the next day cold for lunch (for me).

    For another ground meat dish that has green stuff that my kids will eat, we make Rachael Ray's greek gyros... has spinach in it! Sometimes sub in half ground turkey for the lamb, or grass fed beef. We've always skipped the waffle fries and gravy, and just have some veggies or small salad on the side.
