Have to share this recipe I found. I have been eating gluten-free for over a year and now trying to reduce dairy as well and struggle to find EASY recipes for fall favorites that are actually good. I made this today and it's AMAZING. If you like pumpkin pie you will love this!! DH ate one and liked it..and that's saying a lot (he's always complaining that gluten-free etc things aren't "the real thing" and what not)

it's basically canned pumpkin, coconut milk, eggs, maple syrup, spices..mix it all together and put it in individual ramekins, bake then chill. The end result is basically like a crustless mini pumpkin pie
