    No idea for this week but here's last week's meals:
    Baked potato bar
    Frittata w cheese, potatoes and bacon
    Turkey chili
    Chicken and dumplings
    Stir fry with chicken
    Chicken, stuffing, mashed potatoes, gravy

    Shepherd's pie with mashed delicata squash as the topping in lieu of potatoes. I peel, cube, steam or boil the squash and then mash with cream cheese. My kids love this dish and it is a perfect fall dinner for us. Veggies all included in one dish Delicatas are only in season for a few weeks and then they are difficult to find, so we use them while we can find them.

    Baked salmon, one piece in a honey mustard and olive oil marinade, the other two seasoned with lowerys salt and garlic powder and a side of peppers, tomatoes and a knors cheese and broccoli pasta.

    Moroccan Chickpea Chili since my oldest DD informed me yesterday at 2:00 that she is now a vegetarian. We will see how long this lasts.

    I am doing this tonight: http://aggieskitchen.com/2012/11/29/...apple-sausage/ I can't wait, it sounds so yummy and has some of my favorite veggies in it. I may replace the sweet potato with butternut squash because I don't want my squash to go bad.

    I'm in the throes of pulling together DS's birthday parties (in school on Thursday and for 25 kids and their parents on Saturday), so this is a sad week. I have a big pot of chicken soup in the fridge, so that is an available fallback.

    Monday: Parmesan crusted fish with green beans
    Tonight: chicken enchiladas from left over roasted chicken with snap peas from the freezer (you know it's bad when I go for frozen veggies!)
    Tomorrow: swim class night. Sandwiches in the car for me and the kids. Fridge rummaging for DH.
    Thursday: chicken stuffed with broccoli and cheese (DS's favorite meal)
    Friday: lasagna
    Saturday: God only knows.

    Inspiring, I know.

    Re. frozen veggies...about a year ago, I pretty much decided to only buy frozen. I was sick of feeling inspired at the grocery store then 1-2 weeks later throwing away rotting veggies that I never cooked. I figure fresh is better (especially if I could do a CSA or such again) but this saves oodles of money and reduces waste. Yay!
