    I am having a tough time incorporating the Instant Pot into our routine. I bought it on a whim during the xmas sales and now I am not sure.... The roasted potatoes from the cook book were a bit of a flop (probably something to do with DH's prep) and there were very few recipes that I thought that my family would actually eat.

    DH wants to send it back already! Eek! I need to find a real winner if I want to keep it. Maybe I will try to potato soup recipe....

    I did this chicken noodle soup last night and it turned out perfectly!

    1 pound boneless, skinless chicken breasts, cubed
    2 tablespoons flour
    Salt
    Pepper
    3 tablespoons butter or margarine
    1 diced yellow onion
    4 stalks of celery sliced
    3 sliced carrots
    1 teaspoon thyme
    1 1/2 cups farfalle pasta
    6 cups chicken stock or broth (I used a chicken base to make the broth)
    1/2 teaspoon salt
    1/4 teaspoon pepper

    Add salt and pepper to flour (generously) and toss cubed chicken to lightly coat
    Heat butter on saute mode with lid off until melted and sizzling (i used the lowest saute mode)
    Put chicken in cooker and cook about 5 minutes
    Add onions, celery, carrots, thyme. Stir and cook for another minute.
    Cover with pasta, broth, salt and pepper.
    Cook on HIGH for 6 minutes
    Quick release when done

    It was delicious!

    I also did hard boiled eggs this morning. I didn't use any separate canning lids or cups, just the wire basket insert and lined them up to where they wouldn't bang into each other. I put in 1 cup of water, cooked on low for 6 minutes, and let pressure release naturally. They were absolutely perfect!

    Thanks! I think this is going on our meal plan this week. Did you use dried or fresh thyme?

    I've been making hard-boiled eggs 1-2 times/week. I also make a bunch of chicken or other meat (4lbs) in the Instant Pot, like this recipe: http://www.pressurecookingtoday.com/...-taco-filling/

    I freeze or repurpose the rest after we're done with that night's meal. I made a pasta and sausage dish that came out mushy, but I might try it again because I left it on the warm setting for a couple of hours before we ate.

    I don't plan to ever cook vegetables or starches in there. We don't eat much rice and never eat potatoes. For me, the Instant Pot is going to be for meat, beans, and other proteins. My husband has used it as often as I have, so he's definitely on board.

    Used the Instant Pot for the very first time last night. Made the "German pot roast" recipe from the book "Great Food Fast." Oh my it was amazing! Never had a roast so tender. My hubby was very impressed! Served it with noodles on the side but it was better over the top.

    DH loves our IP and calls it, jokingly, the "magic" pot or "sorcery pot" because he has loved so many of the dishes that I've made in it. Favorites so far have been...

    Mongolian beef
    Minestrone
    Indian butter chicken (better the 2nd day)
    Beef stew
    Chili
    Chicken soup


    I also agree that it makes amazing hard boiled eggs that are a dream to peel.
