    Default Any recommendations for easy, tasty, make-ahead appetizers?

    I'd like to make these for a tropical-themed wedding shower. If you have a recipe that is yummy, easy and MOSY IMPORTANTLY I can make them a day or 2 ahead, please tell me about it! Thanks so much!

    Dates wrapped in prosciutto. Stuff the dates with seasoned mascarpone, ricotta or goat cheese (or a combo) - seasoned with basil or mint, salt and pepper. Wrap in prosciutto and you're good to go!

    Should I secure the bacon with a toothpick? Will anything get soggy if I make them the day before?

    I'm not sure how tropical this is but it's really easy to make ahead, a little different than the usual and usually disappears quickly at parties. http://www.annies-eats.com/2010/01/2...e-cheese-ball/

    Yes, you use a toothpick. Sogginess shouldn't be an issue. I've had this a day later and there's no appreciable change to the texture.

    Gazpacho shooters
    Whole Foods carries this awesome brand- Brat Hans. They make these yummy pineapple teriyaki chicken meatballs (I actually prefer the Sweet Asian ones but the pineapple fits your theme better). They just get warmed up. They can successfully be microwaved even.
