Supper Club Recipe Ideas? Theme is Smokin'

A group of neighbors set up a supper club and each host chooses a theme. The next meeting is Smokin' and I'm having trouble coming up with something. Main dish will be provided (smoked salmon and grilled chicken) so I can bring an app, side, dessert (I'd prefer not to because I brought them for the last two) or a drink.

I've considered Elote because I can smoke the corn on the grill. Or a smoked Gouda soufflé but that may a bit fancy for this theme. Oh and we are gluten free.

Any ideas?

If you have a Trader Joe's nearby, these South African Smoke Chips would be a fun addition! They are like bbq potato chips, but smokey instead of sweet.
