    Default Need a nut-free sweet potato marshmallow recipe...please share!

    I am probaby the only person wo has never made this before...but need a recipe for thanksgiving.
    Looking for a recipe that is nut free, tastes great, and that reheats well since I will be taking it to someone elses house.
    Please share your recipes with me.

    I have one that doesn't have marshmellows, but it is delicious.

    I usually make it with Pecans, but you could definitely leave those out.

    Here it is...

    Sweet Potato Casserole

    Ingredients:

    Filling
    • 3 cups boiled sweet potatoes, mashed
    • 2 eggs
    • 1 ½ cups sugar
    • ¼ lb butter
    • 1 tsp vanilla

    Topping
    • 1 cup chopped pecans Just leave these out
    • 1 cup brown sugar
    • 1/3 cup flour
    • 1/3 cup butter

    Preheat oven to 300oF. Combine sweet potatoes, eggs, sugar, butter and vanilla and mix well. Spoon into 9” X 9” sprayed baking dish. Combine pecans, brown sugar, flour and butter. Spread over potatoes evenly. Bake at 300oF until firm, about 30 minutes.

    My mom starts by boiling 4 or 5 sweet potatoes/yams. Next melt butter (probably half to a whole stick depending on the size of your pyrex) and put in the bottom of a pyrex. Then a nice layer of brown sugar (not sure of exact measurement maybe half a cup?). then top with boiled mashed yams (mashed with butter and a bit of maple syrup). top with small marshmallows. When you get to your destination ... pop in the oven for maybe 20 minutes, until hot and the marshmallows get gooey and toasted.

    We love baked, then mashed sweet potatoes, with some coconut oil, salt and lots of cinnamon mixed in. I serve with chopped pecans as a garnish on top, but could easily leave on the side.
