    Default Favorite recipes for leftover turkey?

    I'm just hoping for some new ideas that come personally recommended . We tend to send lots home with others and then just make sandwiches or keep eating Thanksgiving until it's all gone, but this year it was just the 4 of us, and there's a lot of leftover turkey!!! I'd be really grateful for ideas, especially if they're easy!

    I love to use leftover turkey in Emeril Lagasse's turkey tetrazzini. I'm making it today!

    I've made g-mama's chicken and dumpling soup with leftover turkey. it was delicious! this year we made a cajun inspired turkey soup. I say inspired because there was no recipe, we were just dumping things in the pot. it's good!

    We boiled the carcass and made a basic soup with turkey and veggies we had on hand.

    I made turkey minestrone

    Turkey
    Stock
    Onion
    Garlic
    Basil, oregano, ground fennel
    Salt and pepper
    Kidney beans
    White beans
    chick peas
    Diced tomatoes
    Quinoa
    Simmer until all soft...

    As fresh parsley and asiago cheese. Yum!!
    loving my dh and our littles (dd ~ 11 yrs, ds ~ 9 yrs, ds ~ 7 yrs, dd ~ 5 yrs and baby brother ~ 20 mo)

    We always do a soup from the carcass, too. I'm hoping for more ideas for the meat. I love tetrazzini, but DH is counting calories and won't touch pasta! Boo!!!!
