    I'm looking for a delicious and easy to make side dish for a cookout tomorrow.

    I've forgotten which recipe I used, or if I just improvised, but this one is pretty easy:

    I just do grape/ cherry tomatoes sliced in half, mozzarella balls in similar sized pieces, basil, salt, pepper and balsamic vinaigrette.

    My all time favorite summery side dish is a black bean, corn and bell pepper salsa/salad that is really simple, delicious and flavorful. I serve it with tortilla chips but it's also wonderful on its own. Let me know if you want the recipe.

    Sure!
    1 can black beans, drained
    1 bag frozen roasted corn(Trader Joe's), thaw quickly under cool water
    1-2 chopped red bell peppers
    1-2 chopped tomatoes
    1 bunch chopped cilantro
    1/2 red onion, chopped
    1 chopped avocado (optional- I usually leave it out because I don't like the texture of it in this)

    Mix all ingredients together in a bowl. Shake in several shakes of Trader Joe's Jalapeno Pepper Hot Sauce and fresh lime juice to taste. If serving with tortilla chips, that's it. If serving as a salad, I sprinkle in a bit of coarse salt to taste. You can serve right away, or if you chill a couple of hours, the flavors get even better.
