Here's a great recipe for mussels in the Instant Pot or Pressure cooker. DH and I had it last Friday night for date night and we are still talking about it. We tried going the French route and serving it with fries but after dipping bread in the sauce, we were blown away and didn't touch another fry.

Just a note for the Costco lovers, I bought the mussels there in a shrink wrapped 5 lb container. Since the recipe called for 3 lbs I doubled the sauce and cooked them for 2 minutes instead of 1. It worked out really well and will totally do it that way again.
