Or, I could have titled this "why I cant manage to make a meal in 30min or less"

Tried a new recipe for Spanish rice. You know, one of those 30 min meals.....

The recipe called for 4 cups of prepared rice. I missed the word 'prepared'. 4 cups of dried white rice is a BOATLOAD of rice.

DH missed that he was supposed to brown the peppers & onions with the meat. Had to go back and add that in at the end ..... and add more ground beef to offset the boatload of rice.

Turns out when you add more stuff to this much rice, the contents do not fit in the stock pot we used to cook the rice in.

Thank goodness the girls liked the food b/c thats a huge amt of food!
