So I have recently discovered podcasts (yes, I live under a rock, don't judge). What are your favorites? Really in any subjects, but particularly parenting. TIA!

You're not alone! I just started listening to podcasts in the past year when I started listening to one about the tv show Little House on the Prairie (Little House on the Podcast). I enjoyed that so much I went looking for another podcast about 70s shows. Now I'm listening to "This Podcast Will Kill You" which is two epidemiologists talking about different diseases (smallpox, leprosy, cholera, etc.), where they came from, and how they're treated. I'm also a Conan O'Brien fan, so I listen to his podcast but not when my younger son is around.
I'm looking forward to finding some other ones to add to my list.

I like
Zen parenting radio
The Lazy Genius
Organize 365 - the earlier episodes are more about organizing and less about selling products
Sunday Basket Podcast
Death, Sex and Money
The Moth
Serial
What Should I Read Next
I've recently started listening to podcasts too.
These are some of my current favorites:
Happier
The School of Greatness
Wait wait don't tell me
How I built this
Stay Tuned with Preet
ADDitude
Immunity Education Group
I second This Podcast This Kill You. It is amazing. The two Erin PhD students talk about a new disease every week from the history to the pathophysiology to the evolution treatment. Bonus: New Drink recipe every week.
I recommend starting with the measles one given the outbreaks.

Janet Lansbury is a respectful parenting expert who does podcasts.
I also like the podcasts by Jill Castle and Melanie Potock, both are childhood nutrition experts.
