    I make a bean salad that my kids all love and it's a good source of protein. Use a can of garbanzo or cannellini beans and put some olive oil, lemon juice, and greek seasoning and salt on it. Super easy.

    Baked oatmeal made without dairy, soups, apple slice+sunbutter sandwich, dairy free chicken or tuna salad, shredded chicken or pulled pork sandwich. 100 days of real food has a lot of school lunch pics that might trigger other ideas. We do a lot of snacky lunches with a fruit, a vegetable like baby carrots or snap peas, a protein like lunchmeat or a hardboiled egg, some sort of grain.

    You could also increase your nightly cooking quantity to yield more leftovers.
