Take the plate cover off, disconnect the coax cable, then attach the new Ethernet cable to the end of the coax cable very securely (tape or something). Then slowly pull the coax cable from its source, and it will pull the Ethernet cable through the wall behind it. Get an Ethernet plate cover to replace the old coax one. Where does the coax run to? Basement?
