Just wanted to share Chef John's Salt Roasted Chicken recipe with everyone. It was super easy to make and my entire picky family loved it!

The only thing I did differently was to salt the chicken before moving it to the skillet. Also, afterward I boiled the carcass to make stock, which was an added bonus.
