I know two families who have traveled to Costa Rica within the last month. We really enjoyed our trip there a few years ago - great mix of activity, sites, and relaxing. If you are traveling to either a resort or with a tour company, I'm pretty sure they will provide or schedule your pre-return testing.
We opted to travel within the US this year since DD isn't eligible for vaccination and it seemed easier but I completely get wanting to travel.
