    Default SOUP! Post your favorite recipes!

    It is foggy today! I don't expect it to last--supposed to get to 80 degrees but we feel a touch of cool this morning and we're loving it.

    Some of my kids are actually liking soup these days. Here's a recipe that all my family (except DD) will eat. It is actually pretty healthy and is both vegan and paleo (I think) but everyone I've made this for really likes it!

    No idea if it’s paleo, but a question: if you want the soup to be vegan, do you just leave out the chicken completely or do you substitute some vegan alternative?

    With the soup above I'd just add more sweet potato. I'm not vegan though! (And now I'm wondering why the soup was touted as vegan when it is called "white chicken chili...")

    I LOVE soup! My favorite is split pea, and I make REALLY good split pea soup. I adapted my recipe from a cookbook called Saved By Soup. It's memorized in my head so I don't have a link-if anyone wants the recipe I can post it.
    My house also loves the potato veggie soup that Melaine posted here years ago. It's so creamy (without dairy) and good, and can be modified to suit different veggies (more or less broccoli, more or less potatoes). Wet love it topped with crumbled bacon.

    I'm very surprised my DH really likes it because he usually doesn't like americanized Mexican flavors (he's Mexican). But he really likes the soup and it's super easy and quick (I do it in the instant pot, so I can start with frozen chicken if I've forgotten to defrost some).

    DS2 loves soup.

    One super easy soup recipe from TJs:
    —miso ginger broth, frozen potstickers (whatever kind you like), baby bok choi (just slice it up)

    —white bean and kale (onions, garlic, kale, white beans, broth)
    —French onion (I make a vegetarian version using vegetarian better than bullion)

    NY Times has a great recipe for Baked Potato Soup. Its a great potato soup base, but with all of the great baked potato toppings like bacon, sour cream, cheese, chives, green onion, etc. The best part is that you save the skins from the russet potatoes and cook them until crisp in a bit of oil and serve those with the soup.

    Roasted Tomato Soup: I drizzle cream in the bowl when I serve. I also service with grilled mozzarella cheese and pesto sandwiches

    Itailian Wedding Soup: I make double the meatballs and freeze half for future soups. This is a great soup to get rid of extra spinach (I buy the big box from Costco/Sams)

    Lasagna Soup: This is another great soup to get rid of extra spinach. I cube mozzarella or provalone and put in the bowl before I ladle the soup

    Tortilla Soup: I make this after having rotisserie chicken for dinner. I remove the remaining meat and make a broth with the carcass and skin. I use this broth and supplement with boxed chicken or vegetable broth -- I don't add water. I also usually make it in a dutch oven on my stove instead of a crock pot.

    Gumbo: this winds up being expensive if you include the crab, but it is souper yummy -- be sure to cook the rue until it is dark brown. It makes a lot -- the first time we made half the recipe (because the crab was so expensive) --- but we devoured the left overs. Considering how long it takes to prepare, we make a full batch when we make it now.

    I love making soups since they are a one pot meal usually in the instant pot. We love black bean, split pea, minestrone, butternut squash soups here. Also pasta fagioli which is pasta, beans(usually cannellini) and greens, couldn’t get simpler. Moroccan lentil soup is also one I’ve been making after seeing America’s test kitchen recipe for it.

    I love soup and so do my kids! It's been too hot to contemplate it much, but I made this recently and we all loved it. (Note, if you're like me and didn't leave enough time for wild rice to cook, Basmati tastes good in it too.....) My good-at-eating-veggies-but-hate-mushrooms kids loved it too and even told me the mushrooms tastes "fine" in this, so that's a win! I did use chicken breasts instead of thighs, too.
