I forgot another standard - roast chicken. If it's Sunday serve with mashed potatoes, otherwise something easier (currently into polenta). Plus usually sautéed greens or a salad. Leftovers are great for lunches and the carcass for instant pot stock!
ETA: this does require a little forethought because I like to dry brine it for at least part of the day, and I've tried instant pot and crockpot and there's really no substitute for roasting it in the oven.
