I sometimes sub lentils in for the barley, or just skip all together. Every once in awhile, I'll throw a few potatoes in as well. Comes out great!!!

I use Chop Chop Magazine's because (1) it's foolproof and (2) DD can help; you can start it on the stovetop (browning meat, etc.) and finish in the slow-cooker (or do everything together in the Instant Pot):
