Some random options stuff: The Triad area (which seems to get forgotten about more than other areas in list like this) of NC has Old Salem, where you can get excellent Moravian ginger cookies. Also nearby is the Reynolda Gardens at Wake Forest University. Greensboro has the Guilford Courthouse Military Park, along with the associated greenways & the bicentennial gardens, etc. The NC Zoo is in Asheboro, which is classified as "The world's largest natural habitat zoo." In the Triangle, there's the Capital Building in Raleigh, plus museums, the arboretum, etc. Duke University is always a pretty stop, along with the Sarah Duke Gardens. Heading towards the coast there are forts, etc. plus three aquariums, depending on which section of the state you focus on. There's the Lost Colony outdoor drama on Roanoke Island.
