    Default ISO: recipe for homemade mac & cheese

    Can anyone recommend a good recipe for homemade mac & cheese?

    DS signed me up to make it for a holiday event, and I've never done it. Serving potluck for a group of about sixty, so something I can double or triple easily is bonus.

    This is what I make because we don't like baked. I do it by memory and I guess I use more mustard, too. Maybe 2 tsp.

    We found this one a couple of years ago and it’s what we make for a big group. We don’t like provolone so use havarti instead.

    We made this one a few weeks ago and it was so good I made it again for Thanksgiving. I like to add diced sauteed jalapeños to it (and even diced sauteed Canadian bacon to make it into a meal)! We skip the bread crumb/butter topping, but I still sprinkle the parmesan mixed with paprika on top.

    I don't quite double this one, but I do 1/3 it up (4 cups noodles, etc.). Plus it's in the crock pot, so easy to keep heated. Always gets rave reviews. *But don't use shells instead of macaroni because the one time I did, they just about disintegrated.

    We make it for potlucks often and it always gets eaten with plenty of compliments. My husband has celiacs, so we always make it gluten free, but I’m sure it would be equally as good with regular pasta.

    I make this one from America’s Test Kitchen, and add about 1/4 to 1/3 lb of velveeta in addition to all of the other cheese* (don’t knock the velveeta until
    you have tried it as it makes it super smooth). Sometimes if I am taking it to a party then I will add extra cheese to the top and bake it for a few minutes because it is easier to serve that way and I know it will still be warm. I don’t usually add the bread crumbs and it tastes fine. I believe I have doubled this recipe as well.

    *I use about 1/1/2 cups of whatever shredded cheese I have on hand, which is usually a cheddar/Colby/jack mix and sharp.

    FWIW: the Pioneer Woman one was a complete fail for me.
