    Default What's for dinner?

I'm stuck in a cooking rut and need some inspiration. Please tell me what you're having for dinner!

I too an in a rut but I do all meal planning on the weekend so I don't have to think about it after work daily. Last night we had baked mac and cheese (I think it's a Jessica Seinfeld recipe - uses egg noodles) with garlic sauteed asparagus. Night before was bean burgers with salad. Tonight is stuffed bell pepper soup. Tomorrow is baked chicken parmesan.

    Friday: out for pizza
Weekend- not sure. We usually eat out, have leftovers or something from freezer.

Monday: Parmesan herbed fish, saffron rice, peas (10 minute meal for TKD night)

Tuesday: Greek chicken (I've given the recipe here before. It's chicken in a marinade with a ton of veggies) over puréed cauliflower

Wednesday: garlic shrimp with pasta and salad (10 minute meal for TKD night)

Thursday: chicken tikka masala with veggies, basmati rice (I use a jarred sauce and frozen veggies for a super, super easy meal)

Friday: Panko crusted chicken tenders, green beans, salad

Saturday and Sunday: leftovers and homemade chicken soup

I wish I knew....leftovers probably. DH bought and cooked 2 large pizzas on Monday while I was working so we still have a ton of that leftover.

Our dinner tonight was super tasty and only took me a few minutes to pull together (and could be accomplished while wearing my infant in a sling!) ...

In a 13x9, zest then juice one lemon, add 2-3 tsp of olive oil and a sprinkle of black pepper, basil and garlic powder, then mix it all together. Take tilapia fillets and flip around to coat in the mixture, then arrange in the pan. Drain a can of diced tomatoes, spoon the tomatoes evenly on top of the fish. Sprinkle shredded mozzerella and parmesan cheese on top, along with a little more basil. Cover with foil and bake at 400 for 15-20 minutes. Yum! We ate it with brown rice and a salad.
