    Default Trying to start a RECIPE COLLECTION of tried and true recipes from friends..

    My mom was a pretty good cook but unfortunately, she
    never wrote down any of her recipes which stinks since
    she is no longer with us.

    I'm not good at picking recipes out of cookbooks and I
    don't know what some of the cooking terminology means.

    I am looking for some recipes that are your family favorites
    or maybe a recipe your mom or grandma makes.
    Main dishes especially, even casseroles. Plus, side dishes
    and desserts.
    Also, it has to be a fairly easy recipe! :)

    Thank you for any help! I am a struggling cook and desperately
    need help ! :)

    Hi Corie,

    Here is the recipe for Patrician Potatoes that you requested in the other thread. I love these potatoes so much! I use more cream cheese and sour cream than the recipe states to use (I adjust quantities to taste). I also use reduced fat (but not fat-free, blech!) cream cheese and sour cream and it doesn't affect the taste at all! Enjoy!

    Patrician Potatoes

    8-10 potatoes
    1 8 oz. package cream cheese
    1 cup sour cream
    2 t. salt
    garlic salt, to taste
    pepper, to taste
    paprika
    butter

    Pare potatoes, cook and drain. While potatoes are boiling, beat sour cream and cream cheese until fluffy. Season to taste with salt, garlic salt, and a little pepper. Spoon into a 2-quart casserole, brush top with melted butter, and sprinkle with paprika. Bake at 350 degrees for about 30 minutes or until slightly brown. May be prepared ahead of time.

    ETA: I usually prepare the potatoes the night before and then bake them the next day.

    Ok, we have LOTS of great recipes, but these are my favorite that I can think of right now.

    Crockpot Party Potatoes

    2 lbs hashbrown potatoes (with green and red peppers)
    1 pint french onion dip
    1 cup or so of plain yogurt or sour cream
    1 can cream of chicken or mushroom soup
    2 C chedder cheese

    Thaw potatoes and mix all in a crock pot until hot and bubbly and YUMMY
    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

    Lorrenne’s Texas Sheet Cake
    Cake
    ½ cup oil
    1 Cup Butter or oleo
    4 Tbsp cocoa
    1 C water

    bring to a boil, pour over:

    2 c flour
    2c sugar
    ½ tsp salt

    Add 2 beaten eggs
    Tsp soda
    ½ c buttermilk (or to make your own butter milk = ½ c milk w/ 1 ½ tsp vinegar mixed in milk)

    Bake in jelly roll pan with short sides for 25 minutes at 350 degrees

    Frosting
    1/3 C millk
    ½ cup oleo or butter
    4 Tbsp cocoa

    bring to a boil, add 1 box of powdered sugar
    Add all together while cake is baking, bring cake out of oven hot and pour frosting over hot (warm) cake. Let cake cool for about 5 or 10 minutes before pouring.

    Note: if you're using a stoneware pan, your baking time and cooling time will vary - generally it will take a few minutes longer.

    Fudge Frosting (Carol Reilly's Recipe - My mom)
    1/4 C cocoa
    1/4 C Milk
    1/4 C Butter
    1 C Sugar

    Bring to a boil, and boil for 1 minute
    Beat until smoothe
    Spread Immediately over brownies/cake etc.

    And probably everyone in the free world has a pancake recipe, but this was my mom's :)

    1 C flour
    1 C Milk
    1 Egg
    2 1/2 tsp. Baking Powder
    1 tsp butter
    Pinch of sugar
    (I will also add a little vanilla - less than a teaspoon)

    Never Fail Pie Crust (makes two pie crusts)

    This has a funny story behind it. When my mom was pregnant with my brother (oldest brother) she thought she'd surprise my dad and make him some pies from scratch. She rolled and rolled and spread the dough, and when she was done the pies looked like they were straight from the magazine!! And she was so proud. When they tried to cut the pies, even with a butcher knife, they couldn't. The crust was hard as a rock. My dad said to her "you should sell this recipe to the highway commission!" My mom cried and cried and called her mother. She gaver my mom this recipe :) My mom told this story so many times. My husband uses this recipe for every pie he makes. She gave this to him and was so proud (and of course told the story again)

    3 Cups Sifted flour
    1 C lard
    1 tsp salt
    1 egg
    1 tsp vinegar
    5 Tbsp ICE water

    Combine flour, salt & lard. Cut through with a knife. Mix eggs, vinegar and ice water and add to the flour.

    Roll out and put in pie pan. Cut slits in bottom so the crust doesn't bubble. :)

    My mom always made cinnamon sticks with the leftover pie pieces. She'd lay them out on a cookie sheet and spread either egg white or butter on the crusts then sprinkle generously with cinnamon sugar. I can't wait to make these for Brighton :)

    Gosh, is there any other recipes you all need? When my mom passed away, the only thing my husband really wanted was her recipe box :) and we got it.



    Maybe if I remember I'll start a christmas candy thread around christmas time. My Aunt makes the best candy and I have her recipes...

    Not sure why that double posted...but I found another one that is good for winter time in your hot cocoa - unless you're nursing ;)

    Homemade Peppermint Schnapps
    Carol Reilly

    6 C water
    3 to 3 1/2 C sugar
    1 Oz peppermint extract
    1 Pint everclear

    Heat over med burner until steamy and pour into the everclear bottle or another sealable bottle or jar (like a canning jar).

    Here's a recipe which has become one of our frequent menu items. Very easy, makes a TON, and freezes well.

    Baked Ziti

    1 diced white onion
    1 Pound lean ground beef
    2 26-oz jars pasta sauce - red
    8 Ounces provolone cheese
    1 1/2 Cups sour cream
    8 Ounces mozzarella grated cheese
    2 Tablespoons grated parmesan cheese
    1 Pound dry ziti or mostaccioli

    1. Cook and drain pasta; set aside.
    2. Brown onion and beef, add spaghetti sauce and simmer 15 minutes.
    3. Butter a 9x13 dish. Layer ingredients as follows:
    1/2 of the Ziti
    Provolone Cheese
    Sour Cream
    1/2 of the Meat/Sauce mixture
    Remaining Ziti
    Mozzarella Cheese
    Remaining Meat/Sauce mixture
    Parmesan Cheese
    4. Bake at 350 for 30 minutes.

    Just reading through your mom's recipes made me smile!
    I think I need to find a surrogate mom to take care of
    me!

    Oh, and I will definitely remind you about doing a Christmas
    candy thread. I will put it on my calendar to remind myself!
